Orange Ginger Salad Dressing

Notes: Orange Ginger salad dressing is my version of the dressing you get on the salad in a bento box. Say this with me now: “I only need a little ginger. More is not better (in this case).” This recipe is good on fruit and vegetables

Ingredients
Ginger, 1/4″ slice, about the diameter of a quarter
1 carrot, peeled and rough chopped
juice of 1 orange
a glug of rice wine vinegar
a glug of vegetable oil
A little sugar or maple syrup, to taste (optional)

Directions
Put everything in a blender. Use another 1/2 orange if you don’t have enough liquid.
Pulse until mixed.
Taste. add sugar in small increments, if needed.
