Sablefish

We don’t eat much fish, we felt like enjoying something fresh from the Granville Island Market. The sablefish was beautifully fresh and silky. Round out the meal with fresh asparagus and some boiled red new potatoes. It past the company test – it was easy to talk and prepare at the same time.

Marinade Ingredients
soy sauce
grated ginger
minced or grated garlic
rice wine vinegar
fillet of sablefish, about 1 lb

Combine ingredients in a zip top bag. Add the fish and marinate for ten minutes. Preheat the oven to 350 ºF. In an ovenproof frying pan, sear the fish on both sides. Sear the presentation side first. Put the fish in the oven for about 6 minutes, checking often.  There were a few bones, but they were easy to avoid.
