Notes: I first tried this recently, knowing that I would make it again. It included finely sliced lemon grass and red onions. The jicama and watermelon were both cubed. Substitute honey for maple syrup. About half this recipe is good for a potluck. Other substitutions are lemon zest and lemon juice instead of lime. Add a handful of blueberries if they are in season.
Level: Easy Portions: 2 for potluck or dinners of 8 or less
1 small round watermelon, about 1.57 kg with rind, 964 grams w/ rind removed. 6 cups in 1/2″ or 3/4″
Jicama, about 1/2, peeled, cut in 1/8″ matchsticks, about 4 cups, 404 grams
Lime juice, scant 1/2 cup (about 2 limes)
Zest of one lime
2 tbsp maple syrup, to taste
1/2 cup Mint, finely shredded, lightly packed.
Prepare the ingredients and chill separately. Assemble about 15 minutes before serving so it doesn’t get soggy.
