Cajun Corn Maque Choux

Note: A great side dish by Chili Pepper Madness.

Ingredients

4 slices of bacon chopped
3 cups of corn, about 4 ears worth
1 medium yellow onion chopped (about 1 cup)
1 red bell pepper chopped, medium sized (about 1 cup)
1 jalapeno pepper chopped
1 tablespoon Cajun seasoning
1/2 cup heavy cream or use chick stock for a more traditional version
Hot sauce for serving

Directions

In a hot skillet, cook the bacon until the bacon is cooked and starts to crisp. Pour out excess fat.

Turn heat down. Add corn, onion, bell pepper, jalapeno pepper, and Cajun seasonings. Cook for 20 minutes

Add corn, onion, bell pepper, jalapeno pepper, and Cajun seasonings. Cook, stirring every so often, for about 20 minutes, until the vegetables are tender.

Stir in the cream and simmer for about 2 minutes. Remove from heat and serve.
