Note: It’s a low sodium recipe, somewhat health conscious bar. There are choices in the store, but Jay’s been having a hard time finding something for that mid-morning/mid afternoon snack with enough calories and flavour. I skipped the salt and it tasted just fine. With only 2 tablespoons of vegetable oil, it comes in okay on the fat rating.
Ingredients
3/4 cup (175 grams) brown sugar (firmly packed)
1/2 cup (100 grams) granulated sugar
8 ozs low-fat vanilla yogurt (plain)
2 large egg whites (lightly beaten)
2 tbsps (30 ml) [tipsy content=”Canola or corn oil both work well” group=”0″ use_oembed=”false” ]vegetable oil[/tipsy]
2 tbsps (30 ml) skim milk
2 tsps (30 ml) vanilla
1 1/2 cups (210 grams) all-purpose flour
1 tsp (5 ml) baking soda
1 tsp ( 5 ml) ground cinnamon
1/2 tsp (2.5 ml) salt (optional)
3 cups oats (quick or old fashioned uncooked)
1 cup raisins (diced dried mixed fruit, dried cranberries)
Heat oven to 350°F degrees.
In large bowl, combine sugars, yogurt, egg whites, oil, milk, and vanilla; mix wel
In medium bowl, combine flour, baking soda, cinnamon, and salt; mix well
Add to yogurt mixture; mix well
Stir in oats and fruit
Spread dough onto bottom of ungreased 13×9-inch baking pan
Bake 28-32 minutes or until light golden brown
Cool completely on wire rack
Cut into bars and store tightly covered
