Cranberry Relish

Homemade cranberry relish

Notes: This was a big hit on Christmas day. I froze the left over in ice cube sizes, for a rainy day. I decreased the sugar to 1/2 cup. For the first grind, I used the reversible shredding disc, larger side. Then switched to the chopping blade to finish. I zested the whole orange, then removed the peel before shredding.

Ingredients

1 package raw cranberries, rinsed
2 peeled and cored tart green apples (granny smith), cut into thick sices
1 large, whole seedless orange, zested and peeled
Orange zest to taste
1/2 cup sugar (recipe called for 1 – 2 cups)

Method

1 If you use a food processor, try a shredding disc, larger size and use a chopping blade to finish. Make sure you don’t over-process.

2 Push the cranberries, orange sections, and apple slices through the tube. Add the orange zest afterwards.

3 Stir in the sugar. (Start with 1/4 cup and add 1/4 cups until you reach your desired level of sweetness. Let sit at room temperature until the sugar dissolves, about 45 minutes. Store in the refrigerator until ready to use.
