- 1 large clove garlic, finely minced
- 1/2 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon fresh-squeezed lemon juice
- 1/2 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- Freshly ground black pepper, to taste
- Measure the ingredients into a jar with a tight lid. Shake until blended and emulsified. Taste and adjust seasonings.
- Store in a sealed container in the fridge. Allow to come to room temperature before using.
