Spiced Red Wine Marinade

This uncooked spiced red wine marinade is quite sweet. Use it to flavor and tenderize beef, lamb or pork.  It works wonders on eye of round. If you don’t have the time to fry the spices, skip that step too!

Level: Easy  Time: 5 – 10 minutes  Makes about 1 1/4 cups

Ingredients

1 tsp. coriander seeds
1 tsp. cumin seeds
1- 2 garlic cloves, minced
1 small onion, finely chopped
1/2 tsp. dried chile flakes
1 Tbsp. soft brown sugar
5 Tbsp. red wine (or red wine vinegar)
1/2 cup olive oil

Method

Heat the  coriander and cumin seeds in a small heavy skillet and fry until fragrant, shaking the pan. It should only take a few minutes.

Pour into a bowl and add the remaining ingredients.
