Sausage, Potatoes & Corn

The combination of sausage and potatoes with the sweetness of the corn is comforting and satisfying. Good for big appetites and cold nights. Farmer sausage works well, but use something you like.

Ingredients:
1 lg. potato
2 tbsp. oil
1 lb. sausage
2 c. frozen corn, defrosted
Salt and pepper to taste

Wash, peel, and dice potatoes, between 1/2″ and 3/4″ dice. Cut sausage into rounds. Heat oil in a heavy frying pan. Add potatoes and sausage. Turn heat to medium and cover. Cook until almost tender, about 15 minutes, stirring occasionally. Defrost corn, add to pan and cook another 5 minutes, until corn is warm through. Season to taste, but go easy on the salt –  the sausage may have enough salt for the entire dish.

Variations:
To speed things up, precook the potato in the microwave, then peel and dice. The potato cubes get starchy and gooey if you peel and dice before microwaving, so I wouldn’t recommend it.
