3.5 oz steel cut oats
20.5 oz cold water
Maple syrup, brown sugar or sweetener of your choice
Milk (optional)
For a larger portion, use 4 oz steel cut oats and 23.5 cold water.
Turn a larger element to max heat and a smaller element to very low.
Using a scale, place the bowl on the scale, press tare to set it to 0 and measure 3.5 oz of steel cut oats. Pour the oats into 5 qt pot. Place the bowl on the scale again, check that it shows 0, measure 20.5 oz water and pour into the pot with oats.
Staying in sight of the pot, partially cover with lid until it starts to boil. Remove lid, let it come to almost a full boil (about 20 seconds) and move the pot to the small element on low. Cover and cook for 23 minutes. Do not remove lid while cooking.
Remove from heat. Do not lift the lid and let rest for 5 to ? minutes. The oats are softer this way, but you can eat it right away if you don’t have the time.
Add maple syrup or brown sugar and milk. It makes a substantial portion so allow about 25 minutes to eat.
The hot cereal is watery, which I’m told is better than a thicker mixture. Not stirring reduces the starchiness. Steel cut oats can vary from batch to batch so adjust the amount of water or cooking time as needed.
