Turkish Rice Pilaf with Orzo

1/4 cup orzo
2 tbsp olive oil
1 tbsp butter
1 cup rice
3/4 tsp Diamond kosher salt
1.5 cup water, hot

In a sieve, rinse the rice until the water runs clear. Drain well.

In a medium sized pot, heat the olive and butter on medium heat. Add orzo, cook until brown, stirring occasionally.

Add rice and salt, stir until the rice is bright white, about 5 minutes. Turn heat down a little if needed.

Add hot water, cover and bring to boil. Turn down to simmer and cook for 15 minutes without removing the lid.

Remove the pot from the heat. Remove the lid and fluff the rice with a fork. Wrap the lid with a dish towel and replace for at least 10 minutes. Serve.

Great served with chicken breasts marinated in Best Ever Greek Chicken marinade.
