Watermelon & Jicama Salad

Notes: This is a refreshing recipe on a hot summer night. My version is based on Bobby Flay’s recipe.

Level: Easy 
Portions: About 8 servings

Ingredients

1/2 cup fresh orange juice, plus 1 teaspoon zest
1/4 cup fresh lime juice, plus 1 teaspoon zest ( or use lemon juice and zest)
2 tablespoons honey (can use maple syrup or mint syrup)
1 teaspoon ground black pepper (I use about 1/4 teaspoon)
Kosher salt – a good pinch
1 jicama, peeled and cut into matchsticks (I use about 1/2 a jicama)
4 cups watermelon in 2″ chunks ( I use 1″ chunks)
1/3 cup roughly torn fresh mint leaves

Method

Mix together the first five ingredients in a small bowl. In a larger bowl, combine the watermelon, jicama, and mint. Pour the liquid mixture over and toss to coat. Cover and chill.
