Mint Simple Syrup

Note: I use this in place of honey or maple syrup in watermelon and jicama salad. It adds a taste of mint to fruit salads and cocktails. Thanks to Allrecipes.com.

Ingredients

1 cup water
1 cup white sugar
1 cup fresh mint leaves

Directions

Combine water, sugar and mint leaves in a small saucepan. Bring to a boil, and stir until the sugar dissolves. Simmer for 1 minute. Remove from the heat. Let the syrup steep for about 30 minutes.

Pour the syrup into a sterilized glass jar through a mesh strainer to remove the mint leaves. Cool. Store in the fridge for up to one month.
