Spiced Maple Roasted Almonds

The recipe doubles nicely. Adjust spice mix and heat levels to taste. For a powdery mix, add the dry spices after roasting in the oven.

1 cup whole almonds
1 ½ teaspoon extra virgin olive oil
2 teaspoons maple syrup
1 tablespoon white sugar
½ teaspoon Slap Ya Mama Cajun Seasoning or a mix of your choice
¼ to ½ teaspoon Aleppo pepper
¼ -1 ¼ teaspoons cayenne pepper to taste (optional), cayenne pepper can vary in intensity.

  1. Preheat oven to 350˚F or 325 ˚F convection with a rack in the center of the oven. Line a sheet pan with a silicone baking sheet or parchment paper.
  2. Mix the olive oil and maple syrup in one bowl. Mix the sugar, Cajun seasoning, Aleppo pepper and if using, the cayenne in another small bowl. Then add the dry to the wet and mix well. Pour over the almonds and mix well. Pour into the prepared pan and distribute in one layer.
  3. Check the almonds after 3 minutes, stirring if needed. Roast for 10 minutes, stirring partway through.
  4. Remove from the oven, cool and break up. Store in an airtight jar.
