Roasted kabocha squash with spiced butter & mincemeat- ate about 1/3 (Note 1)
Broccoli sautéed with garlic- peeled – blanched 1 min – ate about 1/3
Precooked spiral ham with brown sugar glaze, 2 x 600 g – 6 people ate 1 + a bit, about 1/3 left after sending slices home for leftovers, 1/2 of glaze left
Slow-roasted salmon with sundried tomatoes and basil – skin removed, slow-roasted – ate almost all
Assorted baked goods – chocolate covered orange slices (Ja), mincemeat tarts, red velvet cookies, almond biscuits (pain d’amande), white chocolate chunk chewy gingerbread cookies
Water, beer, wine (1 bottle), tea, coffee
Note 1: Alison Roman’s Roasted Squash with Yogurt and Spiced Buttered Pistachios (with homemade mincemeat added to butter).
Note 2: Salmon with sundried tomatoes and basil
topping: Dice enough sundried tomatoes to cover the salmon. Roll up 4 or 5 large basil leaves only and cut in thin slices, dice 4 – 6 cloves of garlic, pinch of kosher salt. Mix together in a bowl.
